Happy Father’s Day to all the dads. dads to be etc out there this morning. The kids and I have been up early this morning making cakes for our dads (that is himself, my dad and my father in law – not that we have loads of dads here!)
My dad isn’t into expensive presents. If it’s not something he wants or needs, chances are it will sit in the bottom of a drawer forever. He’s perfectly happy with a packet of toffees and a cake. As you already know, there aren’t many cakes that my dad is *allowed* to eat that aren’t migraine inducing so we baked him this lovely Coffee & Walnut Sandwich for Father’s day. This recipe has been tried and tested on lots of occasions, so we know he is safe with this one and he will love it!
4 eggs (separated)
4tbsp instant coffee (dissolved in boiling water)
350g icing sugar
150g unsalted butter
2tbsp instant coffee (dissolved in boiling water)
Couple of handfuls of chopped walnuts
Preheat the oven to 170c
Whisk the egg whites until they form stiff peaks.
Carefully beat in the sugar, egg yolks and coffee.
Fold in the sieved flour with a metal spoon.
Divide between two 8″ sandwich tins and bake for approximately 30 minutes.
While the cake is baking, cream the icing sugar and butter together and add the coffee. Continue to beat until well combined.
Allow to cool slightly before removing from the tins then cool completely on a wire rack.
Spread butter icing on one side of each of the sponges and sandwich together.
Spread a little over the top and sides of the cake and sprinkle the top with chopped walnuts.
