It’s been a few weeks now since the Afternoon Tea party with Donal Skehan where myself and my fellow bloggers were presented with a copy of Donal’s new cookbook “Kitchen Hero” Reading the tag line “bringing cooking back home” I couldn’t wait to start cooking from it. As you know, I am a mum of two and like a lot of people, I don’t have a lot of time for messing around with fancy recipes, especially recipes that call for obscure ingredients that we just can’t get in our local supermarkets and would require a trip to the city.
Kitchen Hero is not like that at all. Full of easy (yet still nutritious) recipes, I’ve been slowly working my way through it and I’ve cooked a few recipes now. The first of which was Vodka Penne (which we all LOVE – especially ultra fussy child #2), then I went on to do Spatchcock Chicken on the barbecue. It’s the first time I’ve ever cooked chicken on the barbecue and have to say we were very impressed and I’ve cooked it twice now. Unfortunately, on both occasions I forgot to take pictures!
Sofie’s Squashed Potatoes were gorgeous and took very little effort (I swear the ones in the picture above are not burned!) and last but not least, Lemon Meringue Pie – the recipe is actually for Mini Lemon Meringue Pies but after a mammoth Sunday cooking session a couple of weeks ago I lost patience and just made it into one big pie instead. It tasted fantastic and I’ve since made up a batch of the lemon filling which I poured into sterilised jars for my mum to make her own lemon meringue pies at a later date.
My thoughts on the book? I love it!! I have lots more recipes earmarked to try out soon. I have a feeling it will be one of my most used cookbooks. I’m going to be very busy this summer!
