It’s a dull and dreary day here today so after I dropped the kids to school/montessori this morning, I went home and decided to mix up a batch of Chocolate Chip Muffins. These are one of child #1’s favourites so she’ll be delighted to find these when she comes home from school this afternoon! I use a pretty standard recipe for cupcakes/muffins, if you want to make them plain (ie without cocoa) just substitute 50g cocoa powder with another 50g self raising flour.
What you need:
150g self raising flour
50g cocoa powder
50g chocolate chips (or as many as you want)
Preheat oven to 180C
Cream the sugar and butter/margarine together (as usual, I use my trusty KitchenAid to do this)
Keep the machine running and add the eggs, one at a time then add the cocoa powder, flour and finally the chocolate chips. Making sure all the ingredients have been incorporated properly.
Line a muffin tin with paper cases, fill using a large spoon.
Bake for 20-25 minutes.
Allow to cool for 10 minutes.
Note: I got 16 muffins from these ingredients, obviously the number of muffins you end up with depends on how much mixture you put into the cases.
