Banana & Walnut Bread

I stumbled across this recipe on the Odlums website a while ago and have adapted it slightly to use what I have in my own cupboards.  I’ve made it quite a few times when I want to use up bananas that are getting very ripe.  Although the title says bread, it’s actually more of a cake…

In keeping with most of the recipes that I use, this one is simple to make and only takes a couple of minutes to mix up.

What you need:

  • 300g Plain Flour
  • Pinch Bread Soda
  • 75g Margarine (room temp)
  • 150g Caster Sugar
  • 2 Eggs beaten
  • 3-4 medium Bananas mashed
  • 75g Chopped Walnuts

Method:

  • Beat Margarine and sugar together
  • Add eggs and bananas and beat well
  • Mix in flour and bread soda then stir in chopped walnuts
  • Transfer to a greased 2lb loaf tin and bake in a pre-heated oven 180c for 75 mins until firm and well risen
  • Leave in tin for 5 mins then remove to cool on a wire tray
